The -ber months are here! The very long Pinoy Christmas season begins, and we can again greet cold fronts with warm bibingka and puto bumbong.
The bibingka in particular has a combination of sweet and savory that makes it the perfect bite anytime of the day. But, even the best of the classics need modern takes to refresh it and introduce it to a new generation of food lovers.

In the bakery’s own words, the Ultimate Pamaskong Cake is “layers of Bibingka Chiffon Cake, Creamy Leche Flan, Ube Chiffon Cake then a layer of Latik, Muscovado and Pure Macapuno from Jardin ni Nanay. Covered in Ube Swiss Meringue then finally topped with Queso de Bola”
The Ultimate Pamaskong Cake looks like a great centerpiece for Noche Buena, but we won’t blame you if you had it all for yourself.

Smartcook Oven Toaster Bibingka
For the bibingka batter:
- 1 egg
- 1/4 cup melted butter, room temperature
- 3/4 cup coconut milk
- 3/4 cup glutinous rice flour, sifted
- 1/2 cup rice flour, sifted
- 1/2 cup white sugar
- 2 tsp baking powder
- For toppings:
- Salted egg, sliced
- Ham, sliced
- grated cheese
- Additional butter for topping
Others:
banana leaves, heated until shiny
Procedure:
- Pre-heat Smartcook Oven Toaster to 190°c.
- Mix dry ingredients until evenly distributed.
- In a separate bowl, combine egg and wet ingredients until mixed.
- Make a well in the flour mixture, pour in egg mixture.
- Whisk until mixture forms a batter. Avoid clumps and take care not to overwork the batter for a lighter bibingka.
- Line metal cupcake molds with banana leaves and fill until a little over halfway
- Top mixture with salted egg, ham, cheese according to preference.
- Bake for 15 to 20 minutes or until bibingka passes the toothpick test.
- Serve and enjoy!
